Roast Quail Stuffed with Pancetta, Lacinato Kale, and Sage
When you buy your quail, try to get the biggest ones you can find, and make sure they’re semi-boneless, meaning only the drumsticks and wings are left intact for the shape of the finished bird. When you’re working with a bird this tiny, having someone else bone it is helpful. If you have mad knife skills, go for it. Using foil strips like huge twist ties helps set the shape of the quail as they cook, resulting in a pleasingly plump little package. Soft Polenta (page 66) and braised greens are the perfect accompaniments.
Veal Sweetbreads with Parsley, Capers, and Lemon
This riff on veal piccata is not a complicated dish, but it does have a few steps to it and requires some planning to allow the sweetbreads time to soak overnight. Poaching the sweetbreads in milk and aromatics before sautéing them ensures they’ll turn out sweet and meltingly tender. I prefer veal sweetbreads, though you can use lamb. Either one is usually sold in one-pound packs, with two large lobes per pack. If you don’t see them out on display—they’re usually not—ask the butcher if there are any in back, and make sure they are impeccably fresh. The delicate richness of the dish means that nothing more than boiled potatoes are needed as an accompaniment.
Lamb Chops with Finger Favas
This is your grown-up chance to play with your food! Frenched lamb chops, also known as lamb lollipops, just beg to be picked up and gnawed on because the clean bones make lovely handles. Even the veg gets in on the interactive eating, with tender spring favas sautéed in their skins. Besides being fun finger food, there’s an added perk to cooking them this way: because they’re not blanched, the favas stay extra-sweet and firm. Just pick them up one by one and pop them into your mouth, like edamame served in Japanese restaurants. Don’t bother setting forks or knives at the table, but I recommend providing plenty of napkins.
Braised Pork Jowls with the Maligned Mélange
The much-maligned mélange gets its name from the undeserved yet pervasive bad reps held by each of the three principal ingredients in this delectable side: turnips, Brussels sprouts, and chestnuts. But I guarantee you’ll find that baby turnips are sweet and juicy and bear no resemblance to the bitter root vegetable you think you know. Gently sautéing wedges of fresh Brussels sprouts renders them crisp-tender and nutty, while browning chestnuts in a cast-iron pan makes removing their skins a snap, giving you unfettered access to the earthiness inside. Pork jowls, as the name implies, are pig cheeks. When cured, jowls become guanciale; braised, they offer amazing versatility and can then be sautéed, grilled, or added to soups. Like pork belly, jowls have tons of flavor and are very rich. I find that braising helps tame them a bit and makes the cut a little less intense. You’ll probably need to special order this cut from your butcher, but it’s worth it. You’ll need to start this recipe one day ahead.
Swiss Chard with Pine Nuts and Golden Raisins
Swiss chard, with fleshy stems that offer nice texture, has a milder flavor than other greens such as rapini or mustard. I highlight its sweetness with golden raisins and white wine, then add pine nuts for richness and some crunch. Be sure to dry the chard carefully before sautéing, because it gives off a lot of liquid.
Thumbelina Carrots with Orange and Mint
Many recipes that pair carrots with orange call for cooking the carrots with orange juice. Here, I use strips of peel instead, so that you get just a hint of orange, keeping the flavors bright. In the restaurants, we use Thumbelina carrots, a cute, round variety with incredible sweetness. Don’t go crazy chopping the mint—you don’t want to turn it into paste. Just do a few quick strokes with the knife, toss with the carrots, and serve right away. You might want to caution your guests not to eat the orange peel.
Potato and Asparagus Salad with Home-Cured Bacon and Egg
This is my idea of bacon and eggs. Thick, homemade bacon adding a smoky, salty touch to gorgeous spring asparagus and tender new-crop potatoes, all crowned with a perfectly poached egg—it doesn’t get much better than this. When you break into the soft yolk, it melts into the vegetables, forming a luxurious sauce. This recipe makes four hearty portions. If you would like to serve six smaller plates, keep the other quantities the same and simply increase the number of eggs.
Miner’s Lettuce, Fava Beans, English Peas, and Spring Garlic with White Balsamic Vinaigrette
There are as many springtime things in this salad as possible. In Seattle, we have so much rain that when spring comes, it comes HARD—favas, nettles, peas, spring garlic, and a host of wild little greens that go perfectly together. Regular balsamic vinegar is too heavy; white balsamic still has the sweetness, but it’s lighter and allows the flavors of the vegetables to really shine through. This recipe makes more vinaigrette than you’ll need for the salad. Use the remaining dressing on other combinations of delicate spring vegetables and greens.
Rapini with Garlic, Chile, and Lemon
You may know rapini as broccoli rabe, that delightfully bitter green you see in the market next to its mild cousin, chard. Blanching the rapini first tames a bit of the bitterness, while the straightforward preparation allows the vegetable to still be its bold self. Serve with roasted or grilled meats, dishes with assertive flavors that will hold up to the greens.
Lobster Mushrooms with Preserved Garlic, Parsley, and Oregano
Lobster mushrooms are named for their gorgeous color and appear in Northwest markets from August through October. They have a delicate flavor and are very fine textured, making them a lovely addition to the plate. The preserved garlic ties the whole dish together, so don’t be tempted to substitute fresh. Not only would the taste be too harsh for this delicate mushroom, but you’d also miss the mellow richness the preserved garlic offers. If you can’t find lobster mushrooms, you can use other wild mushrooms such as chanterelles or hedgehogs, though the flavor will be different.
Lentils with Pancetta
Most recipes for basic lentils call for you to cook the legumes with vegetables until the lentils are tender. In the restaurants, we precook the lentils with celery, onions, and garlic, then finish the dish with finely diced vegetables that keep their flavor and texture, adding pancetta for richness and texture. I’m sure that once you try this technique, you won’t go back to the mushy mélange that home cooks usually end up with. The lentils make a nice accompaniment to fish and poultry entrées.
Seared Rabbit Loin with Frisée and Pancetta
This is a very grown-up salad and my idea of a fantastic lunch. It also happens to be a great way to use loins left over when you’ve braised or stewed the richer, darker pieces of your rabbit. Like pork tenderloin or filet mignon, rabbit loin can’t take that sort of cooking. Give it a quick sear instead, and toss it with crisp pancetta and frisée in a Chianti vinaigrette. You’ll find yourself making rabbit more often just to end up with spare loins.
Duck Egg Ravioli with Ricotta and Swiss Chard
You know that friend who calls himself a “foodie,” who isn’t impressed with anything you make, because, yawn, he’s made it before and then took it molecular? Make him eat his words with ravioli stuffed with tender chard, rich ricotta, and—this is the magic part—a duck egg that stays intact until the ravioli is cut, releasing a luscious river of yolk. These are big and rich; two per person is plenty.
Spaghetti with Garlic, Chile, and Sea Urchin
Creamy, rich sea urchin roe—better known by sushi lovers as “uni”—makes one of the most extraordinary sauces for pasta that I know, exotic Italian comfort food. We serve different versions in the restaurants, but this is my favorite because it keeps the roe intact. The heat of the pasta “cooks” the roe and each sac is broken only by your fork, allowing you to control the richness of each bite. If you do not have access to live sea urchin, make sure the roe you buy is brightly colored and smells like the sea. For the very best flavor and texture, seek out small-production, artisanal pasta, available in Italian import shops and food stores.
Gnocchetti with Pancetta, Chanterelles, and Mint
This was the very first recipe that we cooked for this book, and it remains a favorite. It’s a perfect summer-into-fall pasta dish for when chanterelles are at their best. The gnocchetti are also a nice size for sharing.
Cavatelli with Cuttlefish, Spring Onion, and Lemon
This is a great dish to bridge the end of winter with the beginning of spring. The bite of the garlic and chile is balanced by the mild flavor of spring’s first onions. Long, oblong, and pretty, spring onions are the first indication to me that fresh garbanzos and nettles are on the way, signaling the end of butternut squash and other winter vegetables. If you can’t find cuttlefish, you may use fresh calamari instead, though the cavatelli is a nice balance for the size and texture of the cuttlefish.
Linguine with Shrimp
The simple name of this dish doesn’t tell you how phenomenal it truly is, especially if you wait until you get your hands on large, just-out-of-the-water shrimp with the shell on. Use the shells to make a quick shrimp stock that acts as a building block of flavor to my basic tomato sauce, transforming the pasta into something special. Freeze the leftover shrimp stock in small yogurt containers and use to make linguine with shrimp again, or use with fish or seafood stews or risotto.
Braised Rabbit Paws with Radiatore
Americans don’t eat as much rabbit as they should, and it’s a shame. Rabbit meat is light and clean tasting, and the legs make a delicate braise without the heaviness of beef or pork. I like to pair this braise with radiatore, a squat, square pasta with ruffles that really catch and hold the meat and the sauce. Ask your butcher to piece out the rabbit for you, then save the more delicate loin—the strips that run along the back—for a quick-cooking preparation, such as the salad on page 112. As with chickens, rabbits are sold as both fryers and roasters, the fryers being smaller and younger with more tender flesh. That’s the bunny you want.
