Ingredients

1 1/2 cups brown basmati, Texmati, jasmine, wehani, or other specialty rice
2 tablespoons nonhydrogenated margarine or whipped butter
3 scallions, thinly sliced
Juice of 1/2 lemon
1/3 cup toasted chopped cashew pieces
Salt and freshly ground pepper to taste

Preparation

  1. Step 1

    Bring 4 cups water to a simmer in a large saucepan. Stir in the rice, cover, and simmer gently until the water is absorbed, about 35 minutes.

    Step 2

    Stir the remaining ingredients into the rice, and serve.
