Sautéed Leafy Greens

I like to eat leafy greens every day, and this is an easy, delicious way to prepare them. Use any leafy green like kale, collard greens, chard (shown opposite), or beet greens. The cooking time for spinach will be a little shorter. These greens make a great side to most main dishes. Paired with brown rice or quinoa they make a simple, healthy lunch. I like to add an entire bunch of fresh chopped parsley just before the pan comes off the heat.

Spot Prawns with Garlic, Sorrel, and White Wine

Lemony sorrel brightens the flavor of spot prawns, large shrimp that can be served with the head and tail on or peeled. To remove the shell, use scissors to cut down the back to the tail tip. Like all shrimp, prawns only take a minute or two to cook, and after that can become tough. Millet provides a fluffy bed that soaks up the sauce. Start this recipe the night before serving so that the millet can soak.

Stinging Nettle Pesto with Seared Scallops

Nettles—weeds that grow throughout the United States—are like something out of a scary children’s story. Their leaves are serrated like teeth and they’re covered with spiky hairs that sting on contact. But the sting is fleeting, and the antidote is the juice of the nettles’ own leaves. Boiled briefly, nettles turn into a rich green vegetable much like spinach. Farmed bay scallops are a good seafood choice because they don’t require antibiotics or other chemical treatment and they clean the surrounding water by filtering out matter.

Indian Spiced Scrambled Eggs

The key to this dish is the texture of the eggs—they should be airy and light. For fluffy eggs, take them out of the pan when they are just barely cooked. For a richer dish, use milk instead of water, or add a cup of Cheddar or other mild cheese just before the eggs leave the stove. Serve with Cilantro-Jalapeño Sauce (page 184), Tamarind Ketchup (page 178), or Citrus Chutney (page 182).

Tofu Steak with Japanese Mushrooms

This is a very comforting, home-style dish, perfect for a blustery autumn day. Be sure to use only firm tofu for this recipe; softer varieties will fall apart during cooking. The trio of cultivated shiitake, enoki, and shimeji mushrooms is a classic combination in Japanese cooking, and it adds a nice woodsy and earthy flavor to this dish. You can use other kinds of mushrooms, too, if you’d like, everything from the humble button mushroom to fancier porcinis or chanterelles—whatever your budget allows.

Sweet and Chili Shrimp

This is a popular dish in Japan that I love to prepare because it has so much going for it: complex sweet and tangy flavors, a heavenly ginger and garlic aroma, and wonderful textures. I’ve included puffed rice paper “chips” to add a nice crunch and a bit of flair. With its fiery colors, this dish makes a beautiful conversation-stopping presentation. I divided my recipe into seven small parts, each of which you prepare separately, then combine everything at the end. The trick here is to make sure you finish your prep before you cook—the actual cook time for the shrimp is only 5 minutes, so you’ll have to move fast! To make the recipe easy to follow, I have paired the ingredients for each step with the instructions.

Potato Gnocchi in Lemon-Butter Sauce with Scallops and Sea Urchin

Sea urchin, or uni in Japanese, is a favorite delicacy back home, one that can be enjoyed raw or mixed as a dressing for seafood. I love the creamy, rich texture and sweet flavor of sea urchin combined with the lemony butter sauce of this gnocchi dish. You can prepare the gnocchi ahead of time, if you’d like. Just toss it with 1 tablespoon olive oil and refrigerate for up to 5 days or freeze for up to 1 month.

Spaghetti with Spicy Mentaiko

This is the iconic Japanese pasta dish, the dish that popularized the notion of combining Italian pasta with intrinsically Japanese ingredients, in this case, mentaiko, aromatic obha leaves, and crispy nori. This spaghetti is as popular at home as it is in “wafu pasta” restaurants, places specializing in Japanese-style pasta.

Squid-Ink Pasta with Crabmeat-Stuffed Squid

This dish first caught my eye early in my career when I worked as a line cook at Chicago’s legendary Ambria Restaurant. We served it as an appetizer, making everything from scratch, including the pasta—and it was one of our most popular dishes. This is a perfect dish for dinner parties. I promise it will impress your guests. Follow the fresh Egg Pasta recipe on page 109, making sure you include the optional squid ink.

Spaghetti with Razor Clams, Seaweed, and Tomato-Basil Sauce

This dish brings back memories of my childhood. I grew up only ten miles from the coast, and spent many Sunday mornings with my friends on the beach digging for clams, which we’d bring home to cook. I love the dense, chewy texture of razor clams, but if they’re not available, other clams work great with this recipe, too, including Manila, Asari, and littleneck.

Smoked Salmon and Salmon Roe Fettuccine

Salmon roe, a sushi bar standard here in America, is a very popular ingredient in Japan. I love how these orange-colored pearls explode with a burst of flavor when you bite into them. They add a wonderful zing to this classic fettuccine recipe. Try this dish in the spring when broccoli is at its peak.

Medley of Japanese Mushrooms with Orecchiette

This is one of my favorite dishes for a dinner party or family get-together: it’s foolproof, makes a beautiful presentation, and everyone will love the layers and layers of flavor. I use cultivated mushrooms in this recipe, so you can cook it year-round. Orecchiette, which is sometimes referred to as “little ears pasta,” is a famous pasta of the Puglia region of southern Italy, and the ideal shape to hold the creamy sauce.

Yaki Udon

This dish is perfect for anyone with a hearty appetite. In Japan, it’s especially popular with teenagers, who devour large plates of these satisfying and filling fried noodles. Yaki udon is also a staple of Japan’s izakaya, or eating pubs, especially as a late night snack or complement to a frosty mug of beer. This recipe works best in servings of two. If you’d like to make it for four people, just prepare the dish in two batches.

Spicy Eggplant Ja-Ja-Men Udon

Everyone in Japan knows ja-ja-men, with its spicy miso and garlicky flavors. Think of it as the Japanese version of spaghetti and Bolognese sauce, a favorite at home and casual restaurants. This may sound counterintultive, but I love eating this dish on a hot summer day—its spices reenergize me.

Chilled Inaniwa Udon with Heirloom Tomatoes and Ratatouille

Save this dish for late summer, when tomatoes and vegetables are at their peak of flavor. Use a variety of heirloom tomatoes, especially ones with different colors, which will make for an eye-catching presentation. Inaniwa udon is a noodle that originated in Japan’s rugged far north. Unlike typical udon noodles, which look like thick spaghetti, inaniwa is shaped like linguine and tastes great chilled.

Yakisoba

Yakisoba is an extremely popular casual dish in Japan, especially with kids. During the country’s annual summer festivals you can always find yakisoba stands crowded next to shrines and temples, ready to feed hungry visitors. Traditionally, this dish is prepared with pork loin or pork belly, but I think it tastes really wonderful with beef. Also, I prefer to use dried ramen noodles rather than frozen because they stay al dente when added to the stir-fry.

Tenshinmen

This is a classic ramen dish that was one of my favorites when I was growing up, but today it’s not as popular as it used to be in Japan. That’s a shame, because there’s so much to love about this dish, especially the play between the sweetness of the crab and the crunchiness of the water chestnuts, and the dramatic presentation of a big chunk of omelet sitting atop the noodles. This dish is finished with two kinds of broth, one to serve as the soup, the other to add a bit of sheen as a glaze. I hope you love this ramen as much as I do.

Tangle of Bitter Greens

Kale, collards, turnip greens, and mustard greens are dark leafy winter greens that are nutritional powerhouses and familiar friends on the Southern table. Look for brightly colored greens free of brown spots, yellowing edges, or limp leaves. Try flavorful seasonings such as smoked turkey or ham hock for the meat eaters and smoked salt or chipotle chiles for the vegetarians. I once demonstrated this recipe on a local morning TV show. Aunt Louise was watching and told Mama later, “She took those greens out of that pan just like they were done!” You won’t believe how fast they cook, either. The best way to clean greens is to fill a clean sink with cold water, add the greens, and swish them around. The dirt will fall to the bottom of the sink. Lift the greens out, drain the sink, and repeat until the water is clear and the greens are free of dirt and grit.

Spinach with Shallots, Pine Nuts, and Golden Raisins

Classic French cooking technique dictates that spinach should be blanched before sauteing. I learned the science behind the method when I produced a DVD with Shirley Corriher called Kitchen Secrets Revealed! Fresh fruits and vegetables are made from living cells. When heated, these cells die and fall apart. All vegetables are slightly acidic, and as the cells deteriorate and continue cooking, the acids leak out and turn the chlorophyll present in green vegetables brown. Miss Shirley (see page 191) calls this “mass death and destruction.” The French technique of blanching vegetables first in a large pot of boiling water dilutes the acids as they leak out, minimizing the amount of acid in contact with chlorophyll. Steaming is another excellent cooking method because as soon as the acids are released from the vegetables they wash away in the steam, limiting the amount of damaging contact with chlorophyll. Finally, stir-frying is a quick cooking and open technique, letting those acids evaporate, and limiting the time for the chlorophyll to lose color. If you don’t want to blanch spinach (or dandelion or chard) and still have it bright green, the trick is too cook it very, very quickly over high heat.

Green Beans Provençal

My grandparents had a garden each summer and fall. To keep the soil rich and fertile, Dede would alternate between the fields in front of the house and behind it and the property down at the river. He planted by the moon and used time-honored wisdom as his guide. Meme would drive the tractor and Dede would follow behind with the plow. Dede loved green beans and would plant rows and rows. When he passed away, Mama tucked a handful in his suit pocket as he lay in his coffin so he wouldn’t miss them. These green beans are fresh and flavorful—a favorite Southern vegetable made with a classic French technique. This dish is excellent served hot, at room temperature, or chilled. If making it ahead, do not add the vinegar until the last moment or it will cause the beans to look mottled and green like hunter’s camouflage.
