Ingredients

2 pounds red skinned potatoes
1 tsp minced garlic
t/t kosher salt and freshly ground black pepper
2 tbsp olive oil
6 sliced bacon
1/2 cup sour cream
3/4 cup mayonaisse
1/4 cup sour cream
2 tbsp chopped green onions
1/2 cup shredded cheddar cheese

Preparation

  1. cut potatoes into bite sized pieces. toss with garlic, olive oil, salt and pepper

    roast at 400 degrees until tender but not mushy

    cool potatoes

    mix remaining ingredients and toss with cooled potates

    serve and enjoy
