1 small butternut squash, peeled, seeded, and cut into 1/2-inch cubes
3 slices bacon
2 teaspoons fresh lime juice
1/2 teaspoon Tabasco, or to taste

Preparation

    Steam squash on a streamer rack set over boiling water, covered, until tender, about 5 to 8 minutes.

    Step 2

    In a skillet cook bacon over moderate heat until crisp, reserving 2 teaspoons bacon fat.

    Step 3

    Crumble bacon into a bowl and toss with squash, juice, Tabasco, reserved bacon fat, and salt and pepper to taste.
