Shredded Brussels Sprouts with Bacon

Recipe information

  • Yield

    serves 4

Ingredients

3 slices bacon (3 ounces)
1 pound brussels sprouts, trimmed and shredded
1 cup water
Coarse salt and ground pepper
Cider vinegar, for drizzling (optional)

Preparation

  1. Step 1

In a large nonstick skillet over medium heat, cook bacon until crisp, 4 to 5 minutes; transfer to paper towels to drain.

    Step 2

Discard all but 1 tablespoon rendered fat from skillet. Add brussels sprouts and the water; season with salt and pepper. Reduce heat to medium-low. Cover and cook, stirring occasionally, until sprouts are tender, 20 to 25 minutes (add more water if pan becomes dry).

    Step 3

To serve, crumble bacon over sprouts; drizzle with vinegar, if desired.

An ex-boyfriend’s mom—who emigrated from Colombia—made the best meat sauce—she would fry sofrito for the base and simply add cooked ground beef, sazón, and jarred tomato sauce. My version is a bit more bougie—it calls for caramelized tomato paste and white wine—but the result is just as good.
