Pico de Gallo

Salsa simply means “sauce” in Spanish. These three versions are delicious served with tortilla chips, or as condiments along-side grilled fish, chicken, or pork.

Ingredients

2 beefsteak tomatoes, cut into 1/2-inch pieces
1/2 white onion, finely chopped
1/2 to 1 serrano chile, minced
2 tablespoons fresh lime juice (from 2 to 3 limes)
1 tablespoon olive oil
2 tablespoons finely chopped cilantro
Coarse salt

Preparation

  1. Combine all ingredients in a nonreactive bowl, adding 1 teaspoon salt; let stand 5 minutes. Season with more salt to taste.
