Ingredients

1 1/4-inch-thick onion slice
2 fresh parsley sprigs
2 anchovies
2 teaspoons drained capers
1 small garlic clove
2 6-ounce orange roughy fillets (about 3/4 inch thick)
1/2 lemon

Preparation

  1. Preheat broiler. Mince first 5 ingredients together. Brush baking sheet lightly with oil. Place fish on prepared baking sheet. Sprinkle onion mixture over fish. Season with pepper. Broil until fish is just cooked through, about 5 minutes. Squeeze lemon over fish and serve.
