  1. Need some, have none

    Step 1

    If you don’t have evaporated milk on your emergency shelf, then for most uses (including drinking, but especially cooking) you can substitute the following for 1 cup of whole milk: 1 cup buttermilk plus 1/2 teaspoon baking soda, or 1 cup skim milk plus 2 teaspoons oil or fat. If you need sour milk, add 1 teaspoon lemon juice or cider vinegar to 1 cup regular milk.

    Step 2

    In baking, depending on the recipe, fruit juice can sometimes be substituted for milk. Apple juice is the most neutral-tasting.

  2. Souring

    Step 3

    Add 2 teaspoons baking soda to a quart of milk and it will be good for another day or two.
