Ingredient tip:

Teleme is a tangy cheese with a soft texture similar to that of domestic Brie. Because of its softness, it can be difficult to slice. Ask your cheesemonger to slice the cheese for you, or partially freeze the cheese before slicing it yourself. Teleme is available at some specialty foods stores and cheese shops. Havarti makes a good substitute.
