Cucumber Ranch Dressing

The addition of cucumber to the traditional recipe results in a dressing with a decidedly lighter, fresher flavor.

  1. Stir together 1 medium cucumber, peeled, halved lengthwise and seeded, then grated on the large holes of a box grater, 1 tablespoon finely chopped shallot, 3/4 cup sour cream, 1/4 cup each buttermilk and mayonnaise, 3 1/2 tablespoons fresh lemon juice (about 1 lemon), 1 1/4 teaspoons coarse salt (or to taste), 3 tablespoons each finely chopped fresh flat-leaf parsley and fresh chives, and a pinch of cayenne pepper in a medium bowl. Season with more salt and cayenne, if desired.
